Rhubarb lovers rejoice – we’re excited to announce our newest preserve: Roasted Rhubarb! Our new Preservationist, Tracey, has been working hard to perfect this little jar of magic. We think it’s the perfect blend of sweet, tart and caramelized, making it very versatile.

We source delicious rhubarb from Mick Klug Farm in Michigan and prepare it 3 ways before everything is mixed together:

Fresh macerated rhubarb gives the preserve it’s body and base flavor

Fresh rhubarb roasted with sugar gives a great, rich flavor and color

Fresh rhubarb charred with sugar adds an extra burst of flavor, color and caramelization

Recommended uses: If you’re grilling pork or chicken with a simple rub, this would be a wonderful condiment to serve with it. We also think it would make a fantastic vinaigrette – perfect with salad. Stir it in your oatmeal or even add it to your favorite cocktail. We love it with our lemon shortbread (as we suggested in our recent picnic post)
