Under a stretched sky and green flecked mountains, just north of Salt Lake City is a “modern cheese operation where old-world craftsmanship is embraced” – Beehive Cheese.

It started with brothers-in-law wanting to break away from the drudgery of commuting and working day-in and day-out on the computer and sitting in office meetings. They worked together to create delicious cheeses, going from sitting in traffic to stirring warm vats of milk, spreading rennet and forming blocks. Beehive is all hand-rubbed, meaning each and every bite you take has had care and focus put into them, gingerly pushing in salt, honey, or even ground coffee. For Beehive it’s all about the rub, to infuse their flavors from the outside in, an aging process that takes time and creates wonderful, creamy decadent cheese.

Creamy it is. Surely they have to thank their fourth generation supplier of real, unadulterated milk for the leg up. But they still go through and test each batch five different ways to ensure it’s purity; the milk is non-standardized as well, meaning as the seasons (and the cows diet) changes so does the profile, fat and protein – which means an ever changing recipe for Beehive, all part of the process for them, and making a consistently amazing cheese. It’s with acts like the seemingly simple thought of spreading local coffee grounds into the rind, they’ve created a complex and lovely new american classic cheese. When the coffee leaches it way into the depths of the wheel on the Barley Buzzed, notes of butterscotch and caramel are abound – we love this cheese placed on a charcuterie board or nibbling alongside a dark beer. We also carry their Big John’s Cajun, a cheese that packs a fiery punch – great topped burger, added to mac & cheese, or anywhere you need a melty/spicy wallop. Both showcase their deep and profound love of what they do in easy to eat form.
