Happy chickens produce better eggs, and that’s certainly the case at Cedar Ridge Farms in Elgin, Iowa. We recently met Neal & Carolyn Lambright, the owners and sole operators of the Amish farm to discuss how their hard work results in the best organic eggs around. Together with their children (after school of course), they strive to create the best environment possible for their 3000 chickens. They started out with just 400 birds in 2010.
First and foremost, their chickens are raised humanely with lots of indoor and even more outdoor space to roam. During the warmer months of the year, they are free to wander outside from morning to sundown, allowing them to get nutrients from the grass and even insects that they nibble on. They are antibiotic & hormone free, with a vegetarian, non GMO diet. Their balanced diet provides them with all the vitamins and minerals they need to stay happy and healthy. A little sunshine on their tail feathers also does wonders! Once their eggs have been laid, they are hand picked, with the help of the Lambright kids, then washed, sanitized, candled and allowed to air dry before they are carefully packed. They travel about 250 miles from Elgin to Chicago, where we use them to make omlets, pancakes, hash and more!
There’s nothing better than cracking an egg into a pan and seeing a fantastically vibrant orange yolk, the tell tale sign of good quality. And that’s why our chefs and customers love them.
